It’s autumn, which means it’s time for all-pumpkin- everything, even in South Florida. Cool off and fill up with this simple pumpkin soup recipe.
21⁄2 pounds pumpkin meat, chopped
13⁄4 pints chicken stock or vegetable stock
1 medium onion, chopped 6 spring onions
4 tomatoes, chopped
1⁄2 pint single cream
salt and freshly-ground black pepper
1⁄4 pint whipped cream
Add pumpkin, stock, onion, spring onions and tomatoes into a large pot, and simmer until tender. Cool, then blend or purée. Add cream and season to taste with salt and pepper. Pour into pre-chilled cups. Just before serving, place a dollop of whipped cream on each portion.

its name is a combination of the Spanish “matar” (meaning “to kill”) and “hambre” (meaning “hunger”). Not only is Matambre delectable, it’s literally a “hunger killer.”
