MEAT OF THE MONTH: BONE-IN RIBEYE

This month we’re all about the bone-in ribeye. You guessed it—this beautifully marbled cut of beef comes from the cow’s rib section. The bone helps the steak retain moisture, so this is one of the juiciest cuts of steak. Our butchers are ready to wrap some up if you want to pan sear it for a perfect date night at home, or join us at one of our restaurants to savor one right here.

MALBEC / CABERNET FRANC 2019

The Rutini family winery is one of our favorites from Argentina. It is no surprise that we try to get as many of their tremendous bottled results as we can over here.

We are proud to have excellent partners and connections to work with in Argentina. Here tradition is paired with the best soil from the Uco Valley, a prime wine region in Mendoza. Those essential features are again paired with experienced winemakers like the great Mariano Di Paola. All this is just a good combination and for us the possibility to bring the best of what Mendoza wineries have to offer to our tables and shelves.

Malbec needs no further introduction here; fruit-forward and spicy, and when this red-wine-rock star is kept close to the suitable wood, it can result in some beautiful and full-bodied red wines that are hard to forget.Red fruit dominates with floral notes, a touch of licorice, spicy black pepper, and a persistent sweet and soft finish with toffee and tobacco notes, all outstanding attributes to find in red wine.

In this case, Mariano Di Paola is blending the 60% of Malbec with 40% Cabernet Franc, another french Bordeaux/Loire varietal that does so well in Argentina’s perfect wine-growing climate. Known for its incredible freshness and an overall savory and vegetal character, this varietal adds just that to this beautiful Rutini blend. Focused and fresh aromas of black and blue fruit and the hints of red and green bell peppers go hand in hand with the red fruit, floral violet, and licorice notes from the Malbec grapes, a great match!

The added juiciness and freshness are also incredible when pairing this red wine with food. The combination with grilled meats like a Bone in Ribeye, Shortribs, or a Tomahawk Steak from our Asador is magic and a lasting experience for the tastebuds!
